Mango in Costa Rica

The climate in Costa Rica and most Latin American countries are characterized by a rainy and dry season.

In the dry season, also called summer, is where you can find the largest harvests of this fruit since in dry climates, it manages to obtain the best properties in terms of sizes, flavors, and colors.

This is because this fruit has a very delicate peel that, when receiving rain, tends to ripen evenly and does not manage to reach the brix levels that are achieved during the summer or dry season.

This dry season starts from the end of January to July. In the middle of this period (around April) is when the peak of the season begins finding large amounts of mango of the different varieties (Keitt, Cavallini, Haden, Tommy, among others).

During the rainy season, the tree has fewer nutrients to feed on so brix levels can be affected if they are not given the necessary care. The mango season can be extended even until August by giving the necessary care to the fruit and scheduling the harvests so that the mango can ripen as much as possible on the tree and does not have to ripen once harvested, which can be affected in sugar levels.

The great advantage that frozen foods have is that you can extend the season or even eliminate the seasonality of the fruit. Taking advantage of the months of peaks and best weeks of harvests is essential to have quality fruit throughout the year.

The great disadvantage that mango usually has is that the harvest does not coincide 100% with the European and American summer so many areas or people are not able to enjoy this fruit when it is the ideal time to consume it.

Therefore, freezing comes as an ideal solution, more if the freezing system allows the fruit to remain fresh when thawing. In this way you eliminate the seasonality of fresh mango and the loss of properties of a traditional frozen.
